Paccheri are a kind of pasta in the shape of very large tubes, originating from Campania and Calabria.They can be served stuffed or not, this recipe is a delicious, healthy Italian pasta dish.
Paccheri with asparagus and sausage Serves 4
Ingredients:
- 500 grams paccheri;
- 500 grams asparagus;
- 2 sausages;
- 1 onion finely chopped;
- 2 tbs extra virgin olive oil;
- salt;
- pepper

Paccheri with asparagus and sausage
Heat extra virgine olive oil in a large skillet over medium heat add onions, half glass of water and cook 7 to 8 min.
Take the asparagus wash them under running water, cut the most tender portions (about ¾ of the asparagus) and cut them in pieces as shown in the picture.
Add the asparagus in the pan let cook a few minutes.
Cut up sausage cook for approximately 6/7 minutes until sausage is cooked, blended asparagus (add salt if desired) cook on low to medium for approximately 5 minutes, stirring often.
Bring a large and wide saucepan of water to the boil, add the paccheri and cook it “al dente”. Before draining the cooked pasta keep apart ½ glass of the water the pasta was cooked in – you might need it in the last phase.
Add the pasta “al dente” in the asparagus mixture and blend well until it becomes creamy. If the pasta is dry add some of the cooking water that you had put apart.
Toss gently to combine and continue to simmer for approximately 1 minute. Serve immediately If you want, grate pepper over it.
